Introducing MINI, Our Head gardener

At Lough Rynn Castle Estate & Gardens, our Head Gardener, Mini, plays a central role in a sustainable, seasonal cycle that connects our historic gardens directly to the heart of our kitchen. Working closely with our culinary team, Mini plans and cultivates a wide variety of fruits, vegetables, herbs, and edible flowers in our Victorian walled gardens, ensuring that much of the produce used in our dishes is grown just steps from the kitchen. This collaboration not only guarantees freshness and flavour in every plate but also significantly reduces food miles and waste. Surplus produce is preserved or composted, feeding back into the soil to enrich future harvests. It’s a mindful, closed-loop system rooted in tradition, sustainability, and a shared passion for exceptional food.

Powered by EasyGo, Ireland’s largest charging network, and easily accessible via the EasyGo App, we’ll get you back on the road fully charged up and ready to go.

Food Produce

At Lough Rynn Castle Estate & Gardens, we aim to provide the best quality food to our guests. As part of our sustainable pratices, we grow our own fresh produce in our gardens. From herbs to vegetables to fruit, everything grown on the first tier, of what we call the ‘working garden’, is brought into the chefs to turn into the mouth-watering dishes our guests enjoy in the Sandstone Restaurant and the delicious jams they enjoy at breakfast.

Where possible, we strive to support local farmers and businesses to support our local community and reduce the environmental impact associated with transportation.

Waste Management

We aim to adopt a reduce, reuse, recycle policy throughout the castle and estate.

Paper/recycled coasters and beer mats are used throughout the hotel as well as paper straws.

 

Our Food Waste and Compost from the Kitchen is used in the Gardens to use in our soil to grow our fresh produce. This allows us to be more efficient and responsible with our waste

  • At Lough Rynn Castle Estate & Gardens, we actively encourage the use of reusable items and sustainable packaging practices throughout our operations. Water filtration systems have been added to the food and beverage outlets removing the need for purchasing bottled water.
  • To help conserve water and reduce waste, we kindly ask guests to reuse their towels whenever possible
  • Our lighting in our rooms are activated by your room keycard, meaning all energy operations are only running when guests are present in their rooms.
  • All of our toiletries’ in the rooms are eco-friendly, recyclable and are crafted with natural and plant-based ingredients.

Biodiversity

Our gardens serve as a dedicated conservation site for the Native Irish Honeybee, reflecting our commitment to pollinator protection and awareness. The bees are expertly cared for by Long Garden Bees, ensuring they receive the highest standard of treatment.

Lough Rynn Castle’s grounds are a haven for biodiversity, supporting a wide variety of native wildlife. From robins to bats, the estate is home to numerous bird species and an array of plant life, making it a thriving sanctuary for nature.
